A sweet and tangy apricot glaze is the perfect topping for juicy pork tenderloin. The slightly spicy “kickin’ ginger apricot glaze” (named by our brilliant chefs) is made by simmering dried apricots and mango with ginger, roasted garlic, Korean chili flakes, and coconut sugar, then puréeing the mixture to smooth, velvety perfection. The glazed pork is plated atop tender roasted green beans. Roasted potatoes tossed with olive oil and Parmesan cheese complete the meal.
